Diabetic Recipe – Peanut Butter Balls


This recipe is especially suited for children  For a more sophisticated pallete, substitute natural almond butter for peanut butter.

PEANUT BUTTER BALLS

1/3 c. natural peanut butter
1 tsp. vanilla
2/3 c. unsweetened coconut, shredded
1/4 c. chopped nuts
1 tsp. lemon rind
1/2 c. raisins

Mix all ingredients together. Form into bite size balls. Chill until firm. Yields 14 balls.

Exchanges: 1 ball = 1/2 fruit and 1/2 fat.. Calories per ball = 88.  Carbohydrate = 6 grams.  Protein = 2 grams. Fat = 7 grams.

  • Nice recipe, I just made this and my son loves it for the chopped nuts I used unsalted peanuts but kept the risins. As part of my meal plan I used to eat 2 table spoons of peanut butter as a snack but I can substitute this recipe for that and it works perfectly in the snack department.
